Shrimp Tacos
Taco Tuesday
Tuesdays were made for Tacos, right!? Go to any local Mexican restaurant on a Tuesday and you’re sure to find some special on Tacos. While chicken and beef make for a great Taco; fresh, local shrimp takes it up a notch! There again, you can get creative and serve them with any and all the toppings catered to your liking! I love mine with black beans and corn and then drizzled with the siracha sauce of course!
I used a basic tortilla shell here (you could use corn tortillas, flour tortilla, gluten-free, spinach wraps, a hard shell taco, anything you like). Throw in some fresh mixed greens, toss on the cooked shrimp and top with black beans, corn, cherry tomato, sour cream or a dip you prefer. Don’t forget to drizzle the siracha sauce for the ultimate pop! I made my own dip pictured here with sour cream, hot sauce, lemon juice and a dash of cayenne.
Ingredients:
1 lb. shrimp Toppings of choice for assembly:
1 tbsp. ground cumin sour cream
1 tsp. garlic powder guacamole and/or pico de gallo
1 tsp. onion powder 1 cup of black beans
1/2 tsp. salt 1 cup whole kernel sweet corn
1/2 tsp. pepper mixed greens
2 tbsp. olive oil cherry tomato
dash of paprika siracha sauce
Instructions:
In a pan on medium heat pour in olive oil and shrimp. Toss to coat the shrimp in pan with cumin, garlic powder, onion powder, salt and pepper and cook just until the shrimp turn pink in color. This does not take long.
* Do not overcook the shrimp as it will make them tough.
Choose tortilla shell of choice and assemble taco, topping the shrimp with all of your toppings. Don’t forget the siracha! It really does seal the deal! Enjoy with a side of tortilla chips, salsa and cheese and you won’t even have to leave home to get that “Taco Tuesday” special!
